Some monsters can cause a status condition which lowers affinity temporarily. Note: Affinity doesn't effect element, shelling, crag S or clust S; however, affinity does affect status-inflicting weaponry. While they may both appear under weapon element, they are considered separate in comparison to one another as far as the game coding and mechanics are concerned.
Essentially, it's your chance to land a critical hit. On top of that, there are other ways to bump up the Affinity stat. Focusing on certain "Skills" will bump it up, such as the "Expert Skill," for example. Another thing to keep an eye on is the "Sharpness Level" with melee weapons. If the sharpness level falls down into the red, then the affinity stat will naturally drop with it.

Frank Frank A key difference in 4U Incidentally, in 3U as well is that the status in question mentioned in the answer Dragonblight doesn't reduce affinity now as it did in Tri, in turn, it nullifies elemental and status damage.
